Gentle, Smooth and Chocolatey
Tasting Notes: An aromatic wine with opulent spice and luscious fruit, soft tannins and a gentle oak character which gives rise to a hint of smooth chocolate.
Food Pairing: The softness of this wine matches it perfectly to both savoury and dessert dishes, enhancing both rich meaty sauces as well as indulgent chocolate desserts. The element of spice also lends itself to curry dishes.
Combination of wild yeast in large oak vats and with selected yeasts in closed stainless steel red wine fermenters. Post fermentation 5 separate batches taken separately to barrel. Individual batches are matured for 10 months, then racked and barrel selection is carried out before being returned to barrel for a further 5 months to amalgamate before assemblage
