Tasting Notes: This stunning sparkler uses 100% Pinot Noir producing an attractive pink colour and a fine, persistent mousse. Maturation ‘on the lees’ for three years bring a rich yet mellow character to finely tuned red fruit resulting in long and luxuriously textured finish.
Food Pairing: Ideally served as welcome drinks or as an aperitif.
Description
All grapes hand sorted, cooled, de-stemmed whole berry to press with 6hrs skin contact. Cold in steel fermenter using a selected yeast strain, racked after 6 months fine lees contact & 100% malolactic fermentation. 3 years sur lees and zero dosage at disgourgement.
