Tasting Notes: A cool-climate Sauvignon Blanc with fresh notes of green citrus, gardenia and fig. It has a beautiful mineral finish which lasts and gives texture to this stunningly elegant wine.
Food Pairing: Perfectly paired with fresh salads, fine poached fish, chicken or seafood and goats milk cheese.
Description
All grapes hand sorted, cooled, de-stemmed and crushed through press to stainless steel tanks. Individual blocks vinified separately in tank using selected yeast strains at low temperature 10-12.5’C. One month on fermentation lees after which the batches are racked with fine lees contact for a further few months bottled.
