The Cipriani Bellini Story:

Many will be familiar with the origin of the world-famous Bellini cocktail, consisting of white peach pulp and brut sparkling wine. It was invented by Francesco Cosulich’s childhood friend Guiseppe Cipriani of Harry’s Bar, Venice, in 1948. The pair have now teamed up to produce a spectacular bottled version of this treasured cocktail which all Bellini lovers will simply adore!

Peaches were in abundance throughout Italy from June through September, and Guiseppe Cipriani had a predilection for the white ones. So much so, that he kept wondering whether there was a way to transform this magic fragrance into a drink he could offer at Harry’s Bar.

Guiseppe Cipriani experimented by pureeing small white peaches and adding some prosecco. Those who tasted this new concoction gave it rave reviews, so Cipriani was encouraged to pursue his alchemy. Named Bellini and from that day on the drink became Harry’s Bar culture and all Cipriani restaurants around the world.

Guiseppe Cipriani was a childhood friend of Francesco Cosulich. We first met Francesco Cosulich at the 2015 Rugby World Cup watching Italy play versus France. Besides his family’s rugby prowess he is a winemaker of great quality and with a wonderful history.
